To unlock everything, go to the in-game cheats menu and input "SHOWTIME".

Disable vehicle collisions:
To disable vehicle collisions, go to the in-game cheats menu and input "GHOST".
Zoomed view:
Switch to chase view to see the rear of your vehicle. Make sure the camera is not locked then Hold L1 and press right analog-stick up or down to adjust the zoom.
